Have you ever met anyone who didn't like bananas? Me either! That's why I decided to create these cute + festive snowflake holiday cupcakes. Instead of regular vanilla or chocolate, I decided to make banana nut cupcakes with cream cheese frosting. YUM!! They were super fun to make + decorate!! I sprinkled unsweetened coconut flakes on top to make it look like they have snow on them.
I'm not sure about you, but I always have bananas sitting on our counter top, and many times I just don’t get to them before they are too ripe. So, before you throw out those overly ripe bananas, bake up some of these tasty cupcakes.
Toppers: I made + used a couple of different toppers for these cupcakes. On a few of them I used adorable tree + ornament toppers that I bought from Michaels. The other versions were pretzel Christmas tree toppers and cactus tree toppers. I'd love to hear which one you like most!
How to Make The Preztel Cactus + Tree Toppers:
While the cupcakes cool, make cactus or Christmas tree cupcake toppers with a small tube of Betty Crocker icing / frosting. I attached a circle shaped piping adapter that I got from the dollar store. Or you can also use green candy melts and transfer the mixture to a piping bag. Once you've done this, place pretzel sticks on a wax paper-lined baking sheet, spacing them a couple of inches apart. Pipe icing over the pretzel sticks in the shape of a cactus or tree then immediately top the trees with the sprinkles. Transfer the baking sheet to the fridge for 10 minutes until the trees have fully hardened.
